seared peppers, fresh peaches & Mâche

I am always looking for  salads that are creative, unexpected and refreshing.  You can perk up your everyday salad by just having a few fresh ingredients in the house and having a supreme vinaigrette recipe.  I love to make a lemon vinaigrette that I can keep in a glass jar in the fridge.  As long as I have something green, and maybe some fruit, I know I can whip up a fast delicious salad that will satisfy!

My favorite greens are mâche, baby spinach or arugula.  Having these on hand ensures me that  when I am hungry I can make something fast instead of reaching for a piece of bread or a cookie!

salad:
1 long green pepper
2 cups  mâche
1 peach, sliced
sprouts or microgreens
1/2 cup purple cabbage

lemon vinaigrette:
juice from 1 lemon
1 teaspoon dijon mustard
1 teaspoon honey
1/2 cup olive oil
1/2 teaspoon fresh garlic or garlic powder
1/4 teaspoon salt (or more to taste)
cracked pepper to taste

Heat a small skillet on medium, add about 3 tablespoons olive oil.  Sear the pepper on all sides until brown.  Sprinkle with coarse salt.

Wash salad greens and arrange in a small flat platter with sliced peaches.  Drizzle with vinaigrette.
