Summer is almost here, and I am getting a jump start. Fire up your grill and let’s get ready! Grilled portobello mushrooms with grilled peaches and apricots. Super simple, healthy and bursting with the flavors of summer.
Fresh stone fruit, large portobello mushrooms rubbed with lots of olive oil, garlic, salt and pepper. It’s as easy as just those four simple ingredients. Grill the mushrooms for about 10 minutes on each side, and the peaches for about 5 minutes per side. I chose to plate these with wild arugula, crushed pistachios snipped chives and fresh mint from the garden.
