Some mornings, I crave something a little more decadent than a smoothie or breakfast cereal. There are times when I want something a little richer. Soft boiled eggs are so simple, delicious and comforting. They always come out perfect and only take about 5 minutes to cook.
Some mornings, I crave something a little more decadent than a smoothie or breakfast cereal. There are times when I want something a little richer. Soft boiled eggs are so simple, delicious and comforting. They always come out perfect and only take about 5 minutes to cook.
Bring a small pot of water to a boil. Slowly add your whole eggs to the boiling water with a large spoon. Set your time for exactly 5 1/2 minutes. When they are done, remove from water to a small bowl and cover with cool water. I find it easiest to peel at the sink under a slow stream of water. Dry gently on a paper towel. Sprinkle with salt.
Serve over a bed of greens drizzled with mustard vinaigrette and berries.
Vinaigrette:
2 tablespoons apple cider vinegar
1 teaspoon dijon mustard
1/4 teaspoon salt
cracked black pepper
1/4 teaspoon garlic powder (or fresh minced garlic)
1/2 teaspoon herbs de Provence
1 teaspoon honey
1/4 cup extra virgin love oil
Add all ingredients to a small glass jar and shake
What weight loss fan or health nut doesn™t like soft boiled eggs? These are great and something so simple looks so wonderful with your presentation in your pictures. I like the mix of greens and raspberries. Your venerate sounds very good also!
