This salad came to me after a trip to my local farm.  I wanted to do something a little bit different with these glorious heirloom tomatoes.  Something refreshing, unique and filled with summer flavor.  I wanted to glorify and highlight the simple sweetness of the perfect tomato.  These tomatoes glistened when I sliced them; juicy and glossy and perfectly ripe.


There is nothing to this recipe…really, just finding great ingredients and assembling them.

2 heirloom tomatos sliced thin
1 cup cherries, pitted and sliced
1/2 cup mango diced small
1/2 cup mint chopped fine
3 tablespoons organic extra virgin olive oil
pinch sea salt and cracked black pepper

Slice the tomatoes thin into circles and layer in a large platter.  Layer with cherries, mango and mint, sprinkle with salt and pepper and drizzle with olive oil.
