Quick, delicious five minute breakfast. I love balancing eggs, with vegetables so that you are getting green goodness nutrition along with balancing out your PH.
Quick Fried Eggs with Veggies
1 1/2 tesaspoons olive oil or coconut oil
2 large eggs
1 cup sliced zuchini
1 small tomato chopped
5 basil leaves, chopped
pinch of sea salt and pepper
1/4 teaspoon garlic powder
- In a small to medium sized skillet warm oil on medium heat.
- Saute the zucchini and tomato, salt, pepper and garlic powder for about 4 or 5 minutes or so, stirring.
- Crack 2 eggs on top of the veggies and cover with a lid.
- Lower the flame to low and let cook for another 3- 5 minutes or until your eggs are cooked to your liking.
