Quick Fried Eggs with Veggies

Ingredients

1 1/2 tesaspoons olive oil or coconut oil

2 large eggs

1 cup sliced zuchini

1 small tomato chopped

5 basil leaves, chopped

pinch of sea salt and pepper

1/4 teaspoon garlic powder


Instructions

  1. In a small to medium sized skillet warm oil on medium heat.
  2. Saute the zucchini and tomato, salt, pepper and garlic powder for about 4 or 5 minutes or so, stirring.
  3. Crack 2 eggs on top of the veggies and cover with a lid.
  4. Lower the flame to low and let cook for another 3- 5 minutes or until your eggs are cooked to your liking.
