The food we put into our bodies dictates how we feel. Food is life.
I woke up yesterday morning (Saturday), wanting to make something different. I wanted to try my hand at making my own organic, non-GMO, corn tortillas… so I set out to source the ingredients and to purchase a tortilla press. My first stop was Bed Bath and Beyond to buy the press, but they had no such item, and so I left the store figuring that I would just order it online and I would purchase organic pre-made tortillas at the market. Done.
Back from vacation. Over ate. Indulged, yes i did…but I did it with delight. Balance is key, and feeling good about your choices is essential. I enjoyed this time with my family and I delighted in the freedom of participating in dinners of brick oven pizza, or a small plate of fresh pasta. So now, after my week away, it’s time to repair and harvest what has grown in my garden. Here is my quick lunch for today. I used whatever I had on hand in my garden, fridge and cupboard.

I love when I have the opportunity to add super foods to a recipe. This is an amazing recipe to make for the kids as an after-school snack. It even makes a great breakfast with a scrambled egg or yogurt before school. These muffins are filled with wholesome ingredients, hemp for extra protein, amino acids, omega 3 & 6 and lots of vitamins. I have also added turmeric which has a compound called curcumin that has tremendous medicinal benefits and powerful anti-inflammatory and antioxidant properties. Feel free to double the amount of turmeric if you are a fan for a bigger boost! These yummy muffins pack only about 170 calories each.
