Garden Harvest Salad

Back from vacation. Over ate. Indulged, yes i did…but I did it with delight. Balance is key, and feeling good about your choices is essential. I enjoyed this time with my family and I delighted in the freedom of participating in dinners of brick oven pizza, or a small plate of fresh pasta. So now, after my week away, it’s time to repair and harvest what has grown in my garden. Here is my quick lunch for today. I used whatever I had on hand in my garden, fridge and cupboard.

Purple cabbage, fresh parsley, basil and oregano, sweet potato, radish, olive oil, black chunky salt and a little balsamic vinegar. I had organic boxed cannelloni beans in the cupboard. Rinse them well.
