I have been making my mother’s banana bread for years and my children and husband LOVE it!  However perfect her recipe might be, I felt that I wanted to make it healthier, add more fiber, and take out some of the sugar.  Today was the first time that I baked with Xylitol and Stevia drops.  The result?  Very good!  I am impressed!  So let’s talk about Xylitol.  I have been very judgmental about this sweetener I must admit… I did not like the name.  Shallow I know, but it sounded so chemical and contrived that I would not dare give it a try.  I did my research and what I have found is that Xylitol is completely natural and is derived from the fiber of fruit and vegetables.  It is a sugar alcohol.  Dr Mercola (whom i trust) even claims that it could be considered  beneficial to ones health.  It looks and measures like sugar.  Next up is Stevia.  I like to use the liquid drops, you can find these at your health food store or Whole Foods.

Ingredients:

3 large organic eggs
1 cup organic cold pressed canola oil
1/4 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon redmonds real salt
2 teaspoons vanilla extract
3 bananas (fresh or frozen)
1 cup organic white whole wheat flour
1 cup organic whole wheat flour
1 cup xylitol
2 teaspoons liquid stevia
Walnuts optional

 

Preheat oven to 350
Mix all ingredients together in mixer.  Butter 2 loaf pans.  Divide mix in half. Bake 45 minutes-1hour
